Cathy's Tri-Tip Roast - YUM!



I have been a follower of Cathy Thomas, Food Editor of the OC Register for years, probably since we moved to Orange County in 1993.  I love her insight into the food world and have found some of my best recipes pouring over the Thursday Food Section of the Orange County Register for as many years.  We tried one of her simple recipes Sunday evening with family.  It could not have been more simple and was simply delicious.

ACathy's Fast Tri-Tip Roast

1 tri-tip roast, fat trimmed off
1/3 cup of Dijon mustard
2-3 tbsp herbes de Provence

The recipe called for baking in the oven at 450 degrees for 25 to 30 minutes.  Sunday night with family over, we decided to BBQ.  It turned out delicious but took an additional 10 minutes on the grill - but it was worth the wait. 

Coat both sides of the roast with the mustard.  Season with herbes de Provence.
