Pannekoeken

I admit I'm a recipe junkie. I have cut out and tried many recipes from the OC Register and our local countywide newspaper. I especially like to look at the Take Five - easy, five ingredient recipes - tried and true and the recipes I've tried have been delicious. Here's the latest one I tried and I wasn't disappointed. It was yummy.

Pannekoeken (Dutch Pancake)

1/4 cup margarine (1/2 stick) cut into pieces
3/4 c flour
3/4 cup milk
3 eggs
1/2 can apple pie filling (flavor of your choice)
Optional:
Powdered sugar
Maple syrup

1. Place margarine in an 8-inch square baking pan. Melt the margarine by placing pan in oven while preheating to 400 degrees. When margarine has melted, remove from oven and set aside to cool slightly while you are whisking the remaining ingredients.

2. Gradually whisk flour into milk. Add eggs, one at a time, whisking after each egg is added until batter is smooth. Pour batter over melted margarine but do not stir into margarine. Spoon pie filling over batter. Bake at 400 degrees 30-35 minutes until the pancake is browned, puffy and raised above the pan.

3. Remove from oven and allow pancake to set for a few minutes. Cut into squares and dust with powdered sugar and drizzle with syrup.

It was delicious!!!!!
