Cream Puffs



Cream Puffs

1/4 c margarine
1/2 c boiling water
1/2 c sifted all purpose flour
1/2 tsp salt
2 eggs

Heat oven to 425 degrees.  Lightly grease cookie sheet.  Melt margarine in boiling water in a medium sauce pan over high heat.  Turn heat off and add flour and salt all at once.  Stir vigorously until dough pulls away from the sides of the pan.  Beat in eggs one at a time blending and beat until dough is stiff.  Drop by spoonfuls.  Bake 12 minutes at 450 then reduce temperature to 350 degrees for 10 additional minutes. Cool on a rack.  Slice top off. Serve with berries that have been sprinkled in sugar with a squeeze of lemon and a tsp of lemon zest.  Top with whipped cream or put a scoop of ice cream in the shell, top with the berries and whipped cream.  Don't forget to put the top back on!  

P.S.  The shells can be used for scoops of savory - chicken salad or tuna salad!
