Easy Artichoke Appetizer


Easy and delicious artichoke appetizer! 

1. Boil an artichoke in a large pot of water until you can easily poke a fork/knife into the stem.
2. Cut in half and brush the cut side with olive oil and sprinkle with salt and pepper.
3. Place cut side down on a hot grill and cook until slightly charred.  
4. Drizzle or dip with Balsamic Vinegar. 

You can eat it just as is or you can always make an easy dipping sauce. Some like to dip in butter, others like mayonnaise.  

Flavored mayonnaise is great - try a little mayo, add lime juice, chopped cilantro, salt & pepper. YUM! Or try a garlic and herb mayo, another good one. 

There are a million combinations you can make with the dipping sauces. Get creative and enjoy!
