Maple-Glazed Chicken



As you  know my mom and I are big fans of tasty yet simple recipes! We're both busy gals and always on the go so we're always searching for new and easy ways to dress up the ordinary chicken dinner; and here is a new one!

Maple-Glazed Chicken

2 TBSP pure maple syrup
1 TBSP reduced sodium soy sauce
2 tsp lemon juice
1 clove garlic minced
1 tsp minced fresh ginger
1/4 tsp fresh ground pepper
2 boneless, skinless chicken breasts

Whisk syrup, soy sauce, lemon juice, garlic, ginger and pepper in a small dish and transfer to a Ziploc bag.  Add chicken and marinate anywhere from 2 hours to overnight. 

Remove chicken and grill on medium heat, approximately 6-8 minutes on each side or until thermometer in the thickest part of the breast reaches 165 degrees.  While the chicken is grilling, put reserved marinade in a small sauce pan and cook over medium heat until it is reduced by half.  Baste chicken liberally with reduced sauce and serve.   I served with rice and veggies.
